Classic Vegan Pancakes

Pancakes are one of the best ways to start your day, I don't think anyone would disagree! You can't beat a stack of fluffy pancakes, topped with fresh fruit and a load of syrup. Here is my easy recipe for classic vegan pancakes.

I have a few different pancake recipes, some made with banana, some using protein powder, however these are my veganised version of a classic pancake recipe - nothing special added just a good old fashioned stack of pancakes!

There are so many ways to top pancakes, usually I will add some chopped fresh fruit depending on what I have in my house at the time, and also cover them in a load of maple syrup! These pancakes are so versitile that they will work perfect with whatever toppings you decide to pair them with.

Prep time: 2 minutes

Cooking time: 8 minutes

Total time: 10 minutes

Servings: 6-8 pancakes

 

Ingredients

  • 120g self-raising flour

  • 1 tbsp sugar or sweetener powder

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon (optional)

  • Pinch of salt

  • Plant-based milk - Approx 160ml + extra as required

 

Instructions

  1. Heat a frying pan over a medium heat with a little oil.

  2. Place all the ingredients in bowl, except the milk, and mix well to combine.

  3. Slowly add a little milk at a time and mix until a thick batter is formed, be careful not to over mix, a few lumps are fine!

  4. Spoon the batter into the heated frying pan to form your pancakes, you may need to do this in batches depending on how large your pan is.

  5. After 3-4 minutes, or when small bubbles have started to appear on the surface, carefully flip each pancake over and cook for a further 2-3 minutes.

  6. Serve with your favourite toppings.

Notes

  • For alternative pancake recipes, have a look at my vegan banana oat pancakes and my vegan protein pancakes.

  • Be careful not to have your frying pan too hot or the outside of your pancakes will cook to fast and the middle will still be raw.

  • If you only have one frying pan then I recommend turning your oven on a low heat to keep the first batch of pancakes warm whilst you are still cooking!
