You can't beat a good pasta dish, and my beetroot pasta is no exception. This beetroot sauce is so creamy and packed full of nutrients and flavour, plus it looks so pretty too! Here is my easy recipe for the most delicious vegan beetroot pasta.
I can't explain how much I LOVE this sauce, the beetroot makes this dish so bright and colourful and adding the vegan yoghurt makes the sauce really creamy. Personally I prefer to make this sauce using coconut yoghurt as I love the flavour it adds to the dish, however this can be substituted for any vegan plain yoghurt if prefered.
My favourite way to top this pasta is with crumbled vegan feta-style cheese and crushed walnuts for extra texture. My current go-to vegan feta is the Violife greek white block which is deliciously creamy and tastes very similar to how I remember feta tasting. Other brands that make a feta-style vegan cheese include GreenVie and Sheese, although I haven't tried these yet so I'm not sure how they taste!
Vegan Beetroot Pasta
Prep time: 5 minutes
Cooking time: 10 minutes
Total time: 15 minutes
Servings: 4
Ingredients
For the sauce:
100g cooked beetroot
2-3 tbsp vegan yoghurt (coconut or plain)
2 tbsp nutritional yeast
1 tbsp lemon juice
2 tsp garlic powder
Salt and pepper, to taste
To serve:
300g pasta, dry
Handful of spinach
20g vegan feta (I used violife greek block)
Handful walnuts
Instructions
Add all the ingredients for the sauce into a blender and blitz to form a smooth sauce. Adjust the seasoning as preferred.
Cook your pasta according to the instructions on the packet, until al dente.
Drain the pasta, add the sauce and spinach to the pan, and return to a low-medium heat, stirring until the pasta is well coated and the spinach has wilted.
Serve topped with crumbled vegan feta and walnuts.
Notes
Any leftover sauce can be stored in a sealed container in your refrigerator for 3-4 days, once heated do not reheat.
This sauce is also delicious cold and makes a great pasta salad.
This recipe also tastes great with some added greens like peas, asparagus, or spinach.
