As a self-confessed chocoholic, I am always looking to create the ultimate chocolate dessert that is not only delicious but also quick and easy to make. Here is my recipe for a no-bake, vegan chocolate torte, that only requires 4 simple ingredients to make and is perfect to serve for any special occasion!
These tortes only contain 4 ingredients (I'm not kidding)! For the crust, you will need some crunchy vegan-friendly biscuits, along with dairy-free spread (my favourite is vitalite). For the silky chocolate filling, I combine tinned coconut milk with some vegan dark chocolate for a rich and creamy mousse-like filling.
For my buttery biscuit base (cue the MasterChef Remix), I used a combination of digestive and ginger biscuits, basically what I could find in my cookie jar at the time. You can use whichever vegan biscuits you would like for the base to create your own unique chocolate torte, other delicious options include oreos and lotus biscoff biscuits.
Vegan Chocolate Torte
Prep time: 10 minutes
Chilling time: 120 minutes
Total time: 130 minutes

Ingredients
200g vegan biscuits
60g dairy-free butter
200g dark chocolate
150ml tinned coconut milk
Instructions
To make the crust, place the biscuits in a blender or food processor and blend to form fine sand-like crumbs. If you don't have either of these you can place them in a bag and crush with a rolling pin but this may take a little longer.
Gently melt the dairy-free spread (I used a microwave), and add to the blended biscuits, stirring well to combine.
Press the crust mixture into the base of your torte dish until flat and compact, I used two ceramic dishes but you can use a larger dish to make one large torte.
Place the torte dish with the crust into the fridge or freezer whilst making the chocolate filling.
For the filling, gently heat the coconut milk in a saucepan, then add the chocolate and stir until fully melted and well combined.
Remove the torte dish from the freezer and pour in the filling.
Place back into the fridge until fully set (2-3 hours).
To serve, decorate as desired. I used some fresh raspberries, coconut flakes and cacao powder.
Notes
Once set, these tortes can be stored in the refrigerator for up to 5 days.
These tortes can be made in advance so you don't need to rush last minute to make the perfect dessert.
Top with whichever toppings you desire, such as a combination of fresh fruit, biscuit crumbs, nuts, or vegan sauce.
Make sure to check that your biscuits are vegan-friendly, as many contain milk or other animal products.
