Vegan Christmas Sandwich

The festive season is well underway which means it is time to cosy up by the fire, bring out the cheesy movies, and crack out the festive recipes. Here is my version of the ultimate Vegan Christmas Sandwich, perfect to use up any of those Christmas Day leftovers!

Vegan Christmas Sandwich

With the vegan movement steadily gaining more and more traction, that means we are lucky to now have a large selection of goodies available across the supermarkets. I've used two of my favourite festive trimmings in this sandwich: Sage and onion stuffing and pigs in blankets, both from the Vegan Plant Chef range at Tesco (which I have linked in the ingredients below). Combined with roasted butternut squash, kale, and my favourite homemade seitan recipe soaked in gravy (YUM)!

Vegan Christmas Sandwich


Prep time: 10 minutes

Cooking time: 30 minutes

Total time: 40 minutes

Ingredients

 

Instructions

  1. Slice the seitan into thin strips and add to a bowl with 100ml of gravy to soak.

  2. Cook the pig in blanket and stuffing according to packet instructions.

  3. Cut the butternut squash into cubes and cook for 25-30 minutes, either saute in a pan or roast alongside the ingredients in the oven.

  4. When there are 5 minutes remaining on the oven ingredients, lightly saute the kale in a pan with a little oil to soften.

  5. Lightly toast your bread and spread a little of the remaining gravy on the inside of each slice.

  6. To the bottom slice of bread, add the butternut squash, kale, and seitan slices, crumble up the stuffing balls, and pour over the remaining gravy. Add the top slice of bread, and finish with a pig in blanket on top.

Notes

  • The sandwich can be served warm immediately, or is equally delicious as a cold lunch to take to work.

  • Other additional topping you could include are cranberry sauce, roasted parsnips, a soft vegan cheese - Pretty much anything you have left over from your Christmas feast!
