Salads are often overlooked as a boring meal, but when they look like this who can say says salads are boring? Here is my recipe for my vegan satay noodle salad, topped with crispy tofu and a delicious satay-style sauce.
This noodle salad was probably one of the first recipes I ever created, I don't know why it has taken me so long to share it! I have been eating this dish for years and it became a staple during my time at university because it was such a quick meal to make and so delicious too.
This salad bowl only takes 20 minutes to make so there is no excuse not to have a healthy meal. Packed full of vegetables, protein, and healthy fats from the peanut butter, this salad has it all! This is also a great dish to meal prep, I often take some with me for a delicious work lunch or to enjoy after a long day.
Vegan Satay Noodle Salad
Prep time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Servings: 2
Ingredients
100g tofu
2 carrots
2 courgettes
100g red cabbage
200g cold cooked noodles
To serve - Fresh coriander, sesame seeds
For the Sauce:
2 tbsp smooth peanut butter
1 tbsp light soy sauce
1/2 tbsp lime juice
1/2 tsp sriracha hot sauce (optional)
1/2 tsp garlic powder
1/2 tsp ground ginger
Instructions
Mix together the ingredients for the sauce in a small jug and set aside, adjust the amount of sriracha based on spice tolerance.
Heat a frying pan with a little oil and fry the tofu until lightly golden, then remove from the pan and set aside.
Spiralise the carrots and courgettes, and finely chop the red cabbage.
In a large bowl, toss together the vegetables, cold pre-cooked noodles, and tofu.
Serve topped with the peanut sauce, fresh coriander, and sesame seeds.
Notes
Any left-overs can be stored in a sealed container for up to 3 days.
This recipe works great with any variety of noodles, I tend to use rice noodles or udon noodles.
If you don't have a spiraliser, you can alternatively finely chop the carrot and courgette.
